How would I do the following in AD? “Make employee number field visible in AD users and computers.”  Also, “Populate all (1500 -2000 current accounts) employee number fields for current employees through a batch import

You would have to do a schema change to add an employee number field and make it visible.

1) Create an attribute object (you will need a unique X500 Object ID)
2) Create an auxilliary class to house the attribute object
3) Add the auxilliary class to the structural object called "User"
4) Modify the display specifiers to make the object visible in ADUC

To populate, use csvde or ldifde.

I'm being vague here because I don't know how much you know about the AD Schema and I don't recommend modifying the schema unless you know A LOT about it.
