I'm running Windows Server 2003 with SBS and Exchange Server. My problem is that I want to disable/delete two e-mail accounts without removing the users. Is that possible?

Sure.  Go to the users properties and remove the e-mail addresses from each.  You should also be able to right click on them and select an option for Exchange tasks where you can remove the entire mailbox.

I was able to delete one mailbox, but I don't want to delete the other one, just disable it. I can't remove the e-mail address from the user properties.

You have to disable the user account if you want to disable the mailbox, I believe.
