Easy way to find out the number of emails processed by our exchange servers each day?

I have been asked to produce stats of how many emails are going through our exchange system. We currently have 3 exchange servers (2 backend and one frontend). Is there any easy way to do this?
I have had a quick look at perfomance monitor but it is unclear what the figures actually mean. We have message tracking enabled, are there any progeams out there that will get the info i need??

Message Tracking will give you the information that you need. It isn't live though, due to the way that Exchange holds on to the files.

There are various tools that you can use to analyse the tracking logs. I have them outlined on my web site here:

The best that I have used is Quest Message Stats, but that is quite expensive though.
