How to remove a email domain from a user

I have a exchange with multiple domains on it, all of my users have email addresses on all the domains, well one of my user gets about 3000 junk mail messages a day. It comes from an email address on only one of the domains, this user doesn't use this address anymore but they do use their name on another domain. so I want to disable the incomming mail on only one domain for this use, I removed it from the list of smtp servers under their profile but mail is still coming in. Do I need to restart the exchange server before this takes effect? or is there something else I have to do?

In exchange 2000, you had to restart exchange services...  looking to see in Exchange 2003....
