redirecting email from a terminated user

What is the best practice or is there a wizard for redirecting email to another user. and when it comes time deleting the account in SBS03

As far as I know no wizard,  but you can add an adress under:  user - properties - e-mail adresses

If you want you can disable the account, amd still let the mailbox retrieve mail, which can be accessible to others to view. This would be a better way of going if you expect the employee to return or expect someone to replace them soon as you can rename the account to the new employee and keep all rights asnd settings.
But if this is not required then delete the account as Zadkin mentioned and then create a new smtp address in the appropriate users account and they will receive email sent to that address.

What I always do is just add the user's email address to the person who will be taking over for them.  You need to remove the email address from the terminated user first though.  Then you can terminate their account in AD.
