Moving user from one exchange server to another

I am helping someone who is currently accessing his email using outlook 2003 and OWA using exchange server (unknown version).   He is now moving to a different email address and purchased a hosted exchange server from 1and1.com (unknown version)

He is planning on accessing his new e-mail account on the same devices as before, but would still like to be able to see his old emails.

I'd like to export his contacts and calendar and upload them to the new exchange server using 1and1's online sync option, which basically allows you to upload a pst.  

I am only interested in exporting contacts/calendar because ideally id like to have him log into another profile to view all the old emails without having to transfer them to the new exchange server.

Most of the solutions ive seen don't specifically address an issue like this.  I have done some digging, but not as much as i should have; i am in a slight time bind.  

I really appreciate any and all help.

You can use ExMerge to extract the Information Store data and put it in a PST file for a given user.

Good luck with 1and1.com - I used them for a time - worst experience I ever had.  Then of course, I researched them and found out 50% of those reviewing them thought they were AWFUL.

it seemed that exmerge only allowed full backup, i didnt see an option for particular folders...
