Exchange 2000 Mailbox retrieval

I need to restore a mailbox from about 1 year ago. I cannot do it on my live server which is Win2K std, Exch2K enterprise. I have built a new server with same name etc. What is the easiest way to replicate my current server. Do I need to restore AD? Can I do a std install of Exchange or does it have to be in DR mode. Any more detail would be appreciated.
