I have an AD server that under the System folder I have a folder called WinsockServices with some references to old server. Do I need the WinsockServices or how do I change the entries within the folder.

This is commonly found when AD has to interact with a non MS LDAP client.  Are you seeing any performance problems or errors in the event log?  Unless you are absolutely certain this entry is no longer required I would leave it alone.
