Is there an alternative to using Roaming Profiles if you still want settings to be able to follow users around?

Settings like Outlook, Internet Explorer, Firefox etc...

Well, Outlook and basic IE settings are automatic with Small Business Server Networks... just by logging in to another workstation.  You should not be using Firefox within a Small Business Network because it's not managed through Group Policy.  Favorites are not automatically provided, but they can be handled in a couple of ways.  The method I like best is for users to create their own Companyweb view (SharePoint) with their own favorites list.   This is a great opportunity for them to start using SharePoint and the advantage of storing favorites in SharePoint is that they are then accessible remotely through Remote Web Workplace > View My Company's Internal Web Site.

Also, My Documents would be automatic if you run the Configure My Documents Folder Redirection wizard from the Server Management Console.
