Email Address Decommisioning

We are getting rid of an old email address but our senior director want me to see if we can determine if any of our users are getting legitimate mail.  Are there logs somewhere that i can pull this information?  Can I just enable logging on the mail servers and import to excel?

I am running Exchange 2003 sp1.

Why bother get rid of the old address?
If you are retaining the domain name, then simply leave it in place. As long as it isn't the default domain name then email leaving your server will have the new address on them, and the old one will not bounce.

Unfortunately as soon as you remove the old addresses from the users, the messages will bounce with user unknown. You do not want to try and capture those messages as I can guarantee that 99% of them will be spam, viruses or both.
