We have an exchange 2003 server on a  windows 2003 box.

We are wanting some way of seeing the mail coming in and out of the system live.  We want to see who the messages are coming from and to.

Does anyone have any recommendations how we can achieve such a thing.

Difficult to do live with native tools.
The closest you can get is message tracking. You cannot query the tracking logs with any third party tools until the next day though.

Otherwise you will have to look at some kind of third party tool to sit between your server and the internet.

I have never been asked for this requirement, so you will need to search.
You may not find anything, as it is quite an unusual request. Look for SMTP journaling applications.
