Looking to log number of messages sent/received to/from our Exchange 2003 server on a monthly basis. Any suggestions on how to or utilities available aprreciated.

Message tracking will give you the raw information.
You then need to process it.

Various tools available for processing processing the logs, Quest Message Stats being the best, if a little pricey. It will give you reports on pretty much anything.
