Downloading and Recording streaming video from sites like google video and youtube.com

Dear Experts:

I would like to know how to download streaming video from popular sites like video.google.com and youtube.com.  I would like to know how to download the actual video file itself, and then convert it to another format, say avi/mpeg/vcd/dvd, and then transfer this file to a dvd to watch on my dvd player or on my computer.  How can this be done?  I have tried searching for an answer unsuccessfully online as whatever information that is available seems to be outdated.

Any help in this matter is greatly appreciated.

Sincerely;
Fayyaz
