Exchange 2003 server - Public folders - copy ONLY the date recd, subject matter & Sent from fields to a file

I need to do some data manipulation / reporting on one of our public folders
I need to export to a file (csv, xls prefered) 3 fields  from a public folder called "Sales Orders" these are "Sent from", date received and subject line

any ideas as to how I might achieve this easily ?

Copy the content to a folder in Outlook, export from there.
