Rename a 2003 Domain Name (FQDN)

It is required to rename an existing Domain (FQDN) to a different FQDN. The domain was converted to 2003 with this in mind.

Are there any good douments showing the procedure and issues involved in this process ?

Appreciate pointers towards steps required to achieve this rename of FQDN.

Also, I believe that the domain functional level needs to be raised to 2003 if you didn't do that when you upgraded.
