Simple Backup Solutions

My company is about to start offering an online backup service (powered by NovaStor) and I am looking for a simple way to back up "small" exchange server 2003 implementations.  Basically what I need to know is what I need to backup and how I need to back it up.  Can I just copy the folder containing the data (MDBDATA)?  Do I need to run a special backup program?

Remember, the systems that I manage usually have fewer than 10 users.

You can use ntbackup (open start-run and enter ntbackup).

Oh by the way, If the online service uses an Open File backup it will not correctly backup Exchange while the service is running.
