Hi,
Is there any chance to track who has accessed certain mailboxes over a period of time?

Environment:

You can also look at the last is logged in to a mailbox, but this is not completely reliable.  If you and I were on the same network, and I tried to open your calendar, I would probably see an access denied till you gave me perms.  It would still stamp your mailbox in exchnage system manager with my userid.
