Exchange logging and reporting - best methods?

We have Exchange 2000 and want to be able to (temporarily) view logs for the following:

1) Which user has sent a mail
2) The subject headers (ie what the mail was about)

We'd like to be able to view the above info in one central are (rather than going checking each Outlook client).

I know that SMTP logging cab be enabled, but is there a way to filter out other information so that we only view what we require (above)? If this is not possible in Exchange, are there any free tools/utils for setting up reporting etc?

Message Tracking.
Part of Exchange.

Once you have tracking enabled you use the Message Tracking Center to track the messages. You can also use third party tools to read the logs and generate tools.
