Exchange 2003 Database maintenance Running out-with scheduled times

Our exchange server is running very slow, I have noticed the following entry in the application logs

0 of 1 folder(s) were deleted during a background cleanup on database "VIP Storage Group\VIP 1 Mailbox Store".

This would suggest to me that the 'database maintenance' is still running.  I have checked the schedule and it should only run from 2200 to 0400.  Information on why this is still running or how to stop it would be a big help!!

I would be surprised if the maintenance was still running, unless the object it was trying to delete was very large.
If you look at Task Manager, is there anything using lots of resources?
There can be many things that can cause a server to run slow, not just Exchange.
Badly configured anti virus is a prime example.

All Resources are low.  I am almost sure that the maintenance is still running but the object size is low.....  I have check AV and it is all fine

What is using the resources, and exactly what resources are used?
Exchange uses what it needs and should give it back. Therefore a high memory use is normal.
