Please open your Server Management Console > Fax (Local) > Devices and Providers > Devices > <DeviceName> > Incoming Methods.

Listed there you should see:

Print
Store in a folder
Route through e-mail
Store in a document library

Does "Print" have Yes listed under Enabled?

Are there any other methods which are enabled?

Well, then... that's why it's printing!

Right click Print and select Disabled.
