Is there a log that keeps some kind of data from outgoing emails?
we have exchange 2003 in a windows 2003 server, clients user outlook 2003. all commments are appreciated.

Nothing by default.

You can enable message tracking and SMTP logging on the SMTP virtual server. However if either of those are not enabled then you will have nothing.
