Let's first define what you mean by editable PDF. Do you want to add interactive form elements, or do you want to actually edit the content of the PDF?
If it's the latter, you are out of luck: PDF is not a format that lends itself to that type of workflow - not even using the Professional version. There are howerver 3rd party PDF editors available (e.g. the Foxit PDF editor) that do a better job than Acrobat itself.
If you want to create form fields, that's also not possible with Standard, but you can create them with the Professional version. If you don't want to spend the money for Professional, you may want to look into Nitro PDF (http://nitropdf.com/)

The latter part of your answer answered my question - I want to add interactive form elements (so that clients can say, click on the line next to "First Name" and type in their name). I have to buy professional or Nitro PDF. Got it - thanks!
