SBS Exchange / Domain Setup

I have been using the Pop3 connector in SBS 2003 > Exchange to retrieve emails from the ISP accounts for a hosted domain and then redeliver them via Exchange to the outlook clients.  I would like to know if there's a way I can point the appropriate DNS records to an exchange server so that the emails will route directly to the Exchange server instead of the ISP's mail server.  Also is there an easy way to archive emails?
