Why do we need to configure a default gateway ?

while working on a networking project of mine, I realized that there was something wrong with my (apparently mis)understanding of the routing process.

My problem is that I cannot see WHY do I have to provide my os with a default gateway. I mean, let's say that I'm in a private network with netmask, my host has the ip and the gateway NAT router is I want to access the webserver with ip address What happens after I hit the GO button of my web browser is an ARP broadcasted request looking the MAC address corresponding to the ip. This request reaches the gateway which is the only one to be able to answer by providing a response with its own MAC address as an answer.

What I don't see is where in the whole process I need the default gateway ? I've tried to figure that out but can't seem to be able to :S...
