Exchange 2003: Recover Deleted Contacts and Contact Folders

A mailbox was cleaned up 2 days ago.  He deleted all of his contacts and multiple contact folders.

We actually need those contacts and I would like to somehow restore those deleted contacts (not the entire mailbox) and move them to a PST and then delete them again.

We are running Windows SBS 2003, and using windows backup to backup the server nightly to a NAS.

I already checked the "Recover Deleted Items" option from within Outlook 2003, but it does not show any contacts to be recovered.

We are talking hundreds of contacts.

The mailbox and user are still active.
