Moving mailboxes from Exchange 2000 to 2003

I will be in charge of moving about 20 mailboxes from E2000 to 2003.  Currently the old server, a Windows 2000, is in the domain 'subdomain.mydomain.com'.  The new server will be an SBS 2003 and we will drop the subdomain, so it will be just 'mydomain.com' instead.  

Now since these are different domains (never joined together in the same forest), and the old server will be decommisioned after moving the mailboxes, what is the best method for moving these?

Also, when moving mailboxes, does this also include the contacts, calendar info, etc.?
