Best practice to keep existing email but have new mail return NDR

I am looking for the best practice to disable an account when someone leaves the company so we can keep the existing email (legal requirement) but not except new mail (return a NDR to the sender).  

I currently disable the AD user account and modify the exchange advanced / mailbox rights - assign the associated external account to SELF.  I then assign another user full mailbox access to another user that needs access to existing mail.
