Removing Exchange 2000 Server from Domain/AD

My goal is to remove the Exchange server from the AD Doman.

We have 2 Win2000 Exchange servers in our domain and I just finished moving over all the users mailboxes to the new server with the exception of 3 mailboxes still on the older server, (which is the first server installed in site), called:
1. System Attendant
3. System Mailbox

I assume these mailboxes are default and dont need to be moved to he new server. The old exchange server is a DC. I also noticed that not all the public folders from the older server are available on the new exchange server.

Im using this article as a guide but want to know if there is anything else I should be aware of. Also how do I transfer the public folders over? Are there any other services I should be aware of that may be running on the old Exchange server that were still using? I just got hired here and would like to fix this.
