Can I demote a 2003 SBS Server and leave it on the network

I transferred FSMO roles from 2003 SBS to 2003 Std R2.  I know I can leave the SBS server on the network for 14 days after doing the FSMO role transfer, but can I demote the SBS to make it a non-DC and leave it on the network longer than 14 days without creating any problems?  I have applications that I want to leave to on the old-SBS server.
