Exchange Server Downtime for Office Move...what happens to incoming mail during downtime?

This is just a simple question I have that I'm unable to find support for.  I'm going to be physically moving my Exchange server from one location to another, requiring about 6 hours of server blackout period during transit.  

What happens to incoming mail while the Exchange server is offline?  Will people simply receive bouncebacks or undeliverable messages during this time?
