DNS and Bind questions

We have a master server running Bind v8.1 that is authoritive for several different domains and we have just had to switch ISP's which forced us to change all the external addresses.  We're going to use the ISP's servers as the slaves.  I have the zone files that define the different domains setup as masters in the named.conf file.
When the slaves poll the master, will all of the different domains defined in named.conf be transferred to the slaves?  Or do I need to ask the DNS techs to make sure that each of the zones get defined?  I've also got a reverse lookup zone file would that get transferred to the slaves?
I've read that if you make a change to your named.conf file you need to increment the serial number of the zone file and then unload and reload named.  If this is accurate do you need to increment the serial number in all of the zone files?  I've got 22 different domains so I've got 22 zone files.
