If you want to brush up general Unix skills (with the perspective of Oracle etc etc), then you should try Solaris as well..
Solaris 10 has some very good features. I am sure you will find a lot of use for your Solaris skills at Oracle or almost anywhere in the world...

OK  I am going to start researching everything you guys throw my way.  If you provide advice please provide the link where I can get it as well.  Like do I get debian from ditrowatch as well.. does distrowatch have all of them?

http://www.linuxfromscratch.org - an online book with the tools to build your own distro.  The whole thing is free and has an irc channel for support, I found this an excellent way to learn some basic linux skills as well as how a distro hangs together.  It's not a project for an evening though, it'll take a few days to hammer your way through, but worth it.  Because you'll be learning base skills, they should translate to most other distros too.

Also for some excellent help whilst learning, the linux documentation project is a good resource at www.tldp.org
