Upgrading from server 2000 DC, File server and Exchange server to 2003 server and exchange server

I am just looking for any input for the procedure below.
I am asking this because my bosses are asking for my input and I have said there should be a few weeks of testing then there should be at least 2 weeks between the domain controller and file server install and the exchange server install.
Am I being to cautious or should we just move ahead with the consultants plan?
First let me say that I am not really qualified to do this work by myself and that is why we have consultants doing this. I have fair amount of experience supporting a network but not doing upgrades on my own. The upgrades I have been involved with, there was always a testing period before the new setup was brought online into production. The consultants want to get the new hardware, install the software bring it in and migrate everything over and bring it into production doing the domain controller and file server one weekend then the next weekend doing the exchange server without any testing.
One of the servers is our Domain Controller running 2000 server. The other is our file server running 2000 server and the third is our exchange server running 2000 server and exchange 5.5. We have approx. 90 users on the network.
We are upgrading all 3 servers to new hardware and 2003 server along with 2003 exchange server.
I am just looking for any thoughts as to if this is the right procedure to do things or should there be some sort of testing and then some sort of time period between the 2 weekends to let things work themselves out. You know there are always going to be some issues.
