Getting database fields to/from variables in C++ Builder?

I'm a newbie trying to get field data both from and to string variables for manipulation in C++ Builder.
I have an Access database, currently connected via ODBC and loaded via TTable.
I can select and edit database fields directly, but need to perform string compares & general manipulation and have hit a brick wall.
Any source snippets or help at all will earn many beers & undying gratitude!

What kind of string compares?  The AnsiString (String) class is overloaded pretty heavily so comparison should be a snap.
