How can I change encoding Mac OS X Mail

Hi,

We just got an iMac and when using Mail to send email to PC users, the encoding is wrong. we don't see accentued char.

How can I change this?

That did it ! I knew it was an encoding problem, but didn't know where was that option on Mail!
