Calculating the amount of spam received.

I am trying to come up with a way to calculate how much spam we receive a day.  I doubt there is a good way to do this but some of the things that would help is:
1. Knowing how much mail we receive per day (number of messages and total size)
2. How much mail is deleted per day (number of messages and total size)
3. How much mail is added to the junk mail folder per day (number of messages and total size)

Is there anyway to get this information out of Exchange 2003 sp1

Do you currently use any kind of spam filter software?  If so, then you can probably get the statistics from that.  If not, then you will probably need to persuade some users to participate in a survey.  There isn't any way you can get the information you describe from Exchange itself.

You could also assume that your spam rate is typical, and say that it is about 75% and rising.
