Ity appears that everyone can see everyone elses email and outlook calendar if they open the other users mailbox.  How do I stop the automatic sharing?

Check the permissions on the Active Directory containers.  Maybe you are allowing everyone access tothe mailboxes at that level.

Do the permissions on the mailboxes or the AD account show that everyone has permission?

Everyone is a security group but nothing is checked.
