I've got a few customers looking to upgrade their laptops now. Vista has appeared since the last time we did this. Which version of Vista is best for SBS? I see there is Premium and Business. I don't know anything about them

You need Vista Business, Vista Ultimate, or Vista Enterprise (which is only available through volume licensing).  The other versions cannot effectively participate in a domain.
