EX 2003 SMTP Bridgehead

I am trying to set an exchange 2003 server as the SMTP relay for the organization.   I have 5 Mailbox servers, and a Journal server (which is sending it's own mail to our 3rd party provider.)  So I want all the servers to "relay" their SMTP outbound to this one specific server.

So if I do not want the Journal server (which again has enough to do while sending all mail in and out to our provider...) I could just load another Ex03 box and strip it down to the SMTP services and needed mailbox space for queue's, then go to the connectors, and make a new one for SMTP bridgehead?

Yep. But if you want the Journal server to send email direct as well, you need to create a second routing group with only the Journal server in it and a new SMTP connector and set them both to have a scope of routing group.
Thanks. I presume you got it all working OK.
