Dump a single users mailbox to a .pst

as part of our policy on employees leaving our company, we are now just going to dump all of their emails off of the server into a pst file and then remove the mailbox from AD.  is there a utility to just dump a single users mailbox ?

You can do this with Outlook or ExMerge:
