We have a public folder that receives external emails. Is there a way to setup a rule or script that would move items from this folder to another public folder once it has been opened? We are looking for a way to keep track of which items have been handled - multiple users access this folder.

Yes, this is possible with a relatively simple bit of scripting. I can post the code for doing this if you're still interested.
