if you don't have mail tracking enabled hen I don't think that you will be able to do it

If you have not enabled the message tracking before sending this mail then you will not be able to track that mail...

Mail can only be tracked after message Tracking is enabled.

For future purpose you can enable the Message tracking, check this:

Since you have or had no tracking enabled you could try and restore the sending mail account for that particular day and export it to a pst. (assuming you have daily backups) Look for the email in the sent items and you should see who the email was sent to.

However this will not tell you if the email was sent successfully.
