Incoming email resolving to an incorrect domain name

Why is it that on occasions that certain emails which we receive resolve to an incorrect address.  For example, we could receive an email from user@microsoft.com but on outlook it appears to the users as something different like user@unknowndomain.com or users@nodomain.com.

This is not preventing emails from being sent or received but would like to know how to resolve this from happening

This most likely has to do with information in the message header - The Friendly name as it is called is what is displayed at the top of the message. This is totatlly configurable by the sending client/server.

Post the complete header/message on here for one of the effected messages and we can make sure that is the case.

If it is configurable by the sender then we as the recipient would be unable to change it?  Can you explain to me how I could change it so that future emails are resolved correctly.  Is it something which i can do on the exchange server?

I do not believe so - this is similar to the "reply to" address for an email, which can be manipulated by the sender regardles of where the message is actually sent from. Again - if you can post a header/message here we can verify this.
