That's by design.  CDO isn't Outlook.  Only messages sent via Outlook are going to appear in Sent Items.

I have several word documents that need to be delivered after created on our server.  Each document is for a different sales person and copied to their managers.  I would like to deliver them using a script instead of manually having to do it each day.

Then CDO is your best bet.  The best workaround I can suggest is to CC or BCC yourself on the messages.
