changing mirrored SCSI drives to larger drives without loosing info.

I am currently aquiring a network maintenance job that the client is upgrading their software from peachtree to Microsoft Dynamics. They have a Dell SC1600 Server with scsi drives 38gb mirrored. I need to keep existing information on the system, However I need to install larger harddrives. I know I need to mirror the drives Im just unsure of how to start. First they are ScSi drives can I remove one of the mirrored drives install one of the larger Drives and continue? or remove one use the Clone software and duplicate to new drive. The only thing thats throwing me is SCSI. Simple yes but thats my issue; any suggestions?

You should (norton) Ghost it on a backup drive!

If you have enough scsi ports free you could simply hook up the new drive or drives, copy the data across then mirror them. once mirrored you could remove the old drives having first deleting the data.
