What is the best software to take a system snapshot for creating installer packages?

I used to use Altiris Rapid Install years ago, and would like to find another package that does the same thing.  Basically captures changes made to Windows, the files copied, registry entries... before and after snapshot and then you make a single .exe file to install say MS Office, Fortress, and other software all at one time.

I know Altiris Deployment Solution offers this, but I was wondering if there is a standalone product that offers the same functionality.  We already have a few good imaging products, but need something for when you don't really need to do an entire image, you just want to do a few updates...

I'm seeing us moving towards a Citrix solution, cause we're just getting too big to update all of our labs and laptops every summer.  Just too much work and time tied up in imaging everything and renaming all the machines all the time.

To package your own, I highly recommend innosetup http://www.jrsoftware.org/isinfo.php this is freeware and includes powerful tools found in other high end products.
