Any ideas on this? I want to share out an inbox, but not it's sub-folders. Ie. A user can only see the actual inbox folder, and not the sub-folders.

You should be able to permission individual folders by just right-cicking and choosing "sharing".
If you are opening an Exchange mailbox using "Open these additional mailboxes" you would also need to see the top of the folder structure.

There are a few places to set the permissions; at the inbox level, the sub-folders and on the exchange server.
I have tried various combinations, but can only get the whole mailbox and all folders showing. Can you give me tips on exactly what permissions to set and where?

Of course :)

First you must make sure that the person to have access doesn NOT have the "Full Mailbox Access" permission set under Exchange Advanced / Mailbox rights in the maibox user object - this would give access to all folders as you have described.

Once this have been checked / removed you should be able to use the Tools | Options | Delegates menu items within access to grant the required permissions to just the inbox.

If you require the mailbox to be access to be visible in the tree structure in outlook, using Email Accounts | Change | More settings and "Open these additional mailboxes", you will also need to right click the top of the folder structure in the mailbox (usually named Mailbox - <username>) and select sharing, then give the person to have access "Folder Visible" permission.

Hopefully this will help, let me know if you have any issues.
