Basically www.google.com will direct you to one of many servers designed to take the traffic directed at the site.

As stuart stated when you go to googles site you are accessing a "server farm" as no one server could handle their traffic.  For a list of googles IPs go here.

Look closer: you don't get *different* IP addresses each time; you get the same list each time, but the one from the top of the list wanders to the back each time you look up the name (1=64.233.169.104, 2=64.233.169.147, 3=64.233.169.99, 4=64.233.169.103):
nslookup www.google.com
Addresses: 1, 2, 3, 4
nslookup www.google.com
Addresses: 2, 3, 4, 1
nslookup www.google.com
Addresses: 3, 4, 1, 2
nslookup www.google.com
Addresses: 4, 1, 2, 3

This is a "round robin" entry:

google basically has 4 different DNS servers.  ns1, ns2, ns3, and ns4.  you can download a free dns analyzer tool and type in any domain name and see the authoritative an name servers for that domain.

sorry  i forgot to include that they have 3 IP addresses that serve their website.  now withing each of those 3 addresses there is actually many servers per IP address.  when you make a request to google.com it actually goes into a round robin and pics the least taxed server farm.
