How are transaction logs moved to their own disk in Exchange 2007?  I could not find it in the Management Tool.

Highlight the Storage Group in the EMC and you will see the context menu on the right side change.
"Move Storage Group" is what you want.

No.  I only want to move the transactions logs (Not the Databases) to another location.

Yes.
Go to where I told you and LOOK properly.
Databases are moved to another location from the properties of the DATABASE.

I told you to go to the properties (or context menu) of the STORAGE GROUP.

Do as you have been advised and you will see what you need.

I agree that the description "Move Storage Group" could be better defined and include the word Logs but the fact is that they don't.

You should have checked carefully before rejecting a correct answer.
