My apologies... I am running Windows Server 2003 R2, (Enterprise Edition) Service Pack 1 with Exchange 2003 Verision 6.5 (Build 7638.2: Service Pack 2). Do you see any issues with me upgrading my Server OS to SP2? Also... when I do click on the log file... a 'huge' amount of other log files show up as being corrupt also...

The log file indicated is corrupt. You need to remove that log file.
However I would suggest that you also update your server.
